What should I eat… What Should I snack on??

This is how I created my favorite bar recipe. This bar was designed to provide the nutrients that MY body is hungry for. While feeding myself, it caters to my taste buds and energy tank as well. You can’t buy this nourishing superfood bar packed full of goodness and delicious.

Use this recipe as a guide and add what you prefer, regardless it will better than 95% of most store bought “candy bars”
Super Food Meal Bars
Makes 8 Bars
- 1⁄2 Sweet potato (baked/steamed)
- 1⁄4 Chopped Carrot
- 1⁄4 Cup Kale (chopped) 1⁄4 Cup Dates (pitted)
- 1-2 Scoop Vanilla Pea Protein 2 Tbsp Almond Butter
- 2 Tablespoons Chia Seed
- 2 Tablespoons Hemp Seed
- 2 Tablespoons Maca (optional)
- Tsp. Cinnamon
- Tsp. Turmeric Tbsp.
- 1 Tbsp Coconut Oil or Coconut Butter
- 1 Tbsp Almond Butter
- Lemon juice
Directions:
Chop up Carrots and sweet potatoes (cooked preferably)
Add Kale. Mix up and set aside in large mixing bowl
Add in dry ingredients
Add in protein (optional)
Mix up dry ingredients before adding sweet potatoes, carrots, and kale
Add in the rest of the mix – Mix and mix and mix (2 minutes)
Add in dates (optional)
Add almond butter & Coconut butter
Add in optional boosters (cinnamon for blood sugar and taste + Turmeric for inflammation and immune)
If too dry… Add lemon or tea (more superpowers)
Keep on mixing
Roll out on parchment paper
Set in freezer for 2+ hours
Cut and shape for your preference
Enjoy.. best left in fridge but ok to sit out. Good for 1-2 Weeks. But they don’t last that long if there is a cookie monster in the house.
I love this superfood idea! A couple questions… did you mean 1/4 cup carrot? What you have pictured looks like more than 1/4 of a carrot!
Do you peel the sweet potato?
It looks like you are using a food processor? Or do you mix by hand?
Yes I only used half a carrot, I mixed up extra and set aside. I’ve been prepping up Sweet potato, Carrots, and kale to snack on. Having them pre made makes food prep super easy! I do not peel sweet potato but I cut off and bruises or weird spots… Then ideally boil or bake potato to soften. Usually have them in bulk.
I use a smaller food processor (kitchen aid). Super convenient!
They taste great.. Add in whatever you prefer!
